happy early thanksgiving, all! i know that many of you are spending today preparing for thanksgiving, whether you’re hosting 40 people for dinner, or just your immediate family. i have a bunch of wonderful recipes, cocktails, + crafts all ready to post, but i didn’t want anyone to miss out on seeing them in the busyness of today, so i’m giving a past recipe an encore post instead.
the DIY pumpkin spice latte, which i posted a little over a month ago, generated a ton of positive feedback, both from my friends + readers of the blog. i truly think it is even better than the starbucks version, if you can believe it. it would be a wonderful accompaniment to your thanksgiving desserts, so consider adding it to the menu as a last-minute addition. enjoy the day + have fun getting ready for thanksgiving!
pumpkin spice latte
makes two lattes, adapted from the kitchn
2 cups whole milk
2 tablespoons canned pumpkin
2 tablespoons sugar or sugar subtitute
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
2 shots espresso (about 1/4 cup) or substitute 1/2 cup of strong brewed coffee
in a saucepan combine milk, pumpkin + sugar, + cook on medium heat, stirring, until steaming. remove from heat, stir in vanilla + spice. transfer to a blender + process for 15 seconds until foamy. if you don’t have a blender, whisk the mixture well with a wire whisk.
pour into two mugs. add the espresso on top. optional: top with whipped cream + sprinkle with pumpkin pie spice, nutmeg, or cinnamon.print this recipe
